Chicken and Sweet Potato Crock Pot Magic

As you may have gathered by now, I'm just crazy for sweet potatoes. Love them. Ditto for my slow cooker. It requires an act of God in our house to just open the damn oven - I swear my 2-year-old can sense danger from a mile away and immediately runs toward it - so the Crock Pot is a tool on which I rely heavily. At least until he learns to climb up on the kitchen counter. Which will probably happen tomorrow.

And so - 2 of my faves collide in this super yummy, SUPER easy recipe. Enjoy!

Brown Sugar Chicken and Sweet Potatoes



Ingredients:
3 chicken breasts
2 large sweet potatoes, peeled and sliced into 1/2 inch thick rounds
1 onion, sliced into rings
2 Tbs. brown sugar
1/8 c. orange juice
salt, pepper & cayenne pepper to taste

Place the chicken in the Crock Pot; season generously with salt and pepper. Top with the onion slices and then the sweet potatoes. Sprinkle the brown sugar evenly across the sweet potatoes and then pour the OJ on top of everything. Season the sweet potatoes well with salt and pepper, and a good sprinkle of cayenne pepper. (I make mine pretty spicy, which gives a nice edge to the sweet ingredients.) Cover and cook on high for 5 hours.

Serves 2 and a couple kiddos.

  2. Made this tonight-Very tasty!! I would just wish there was a measurement to the cayenne, as I was a bit heavy handed. I also would sear the chicken and the onions a tad, but I will DEFINITELY be making this again!! Thank you for the recipe!

    1. I am glad you liked it! Great idea to sear the chicken ahead of time - but as a mom with 2 small children, I am notoriously lazy in the kitchen! :)

    1. Either will work! I have used fresh or frozen chicken breasts depending on what I have on hand. Hope you enjoy it!

    1. I have modified it for picky eaters and it's still yummy! I personally like the cayenne because it's a nice contrast to the sweetness. Let me know how it turns out!

  7. I made this for dinner tonight and appreciated having such an easy meal. I used leg quarters and subbed apple cider vinegar and a little orange zest since I didn't have OJ in the house. And I left out the cayenne...I just don't care for it. While the flavor was good, I will admit that I found it (and most other similar crockpot meals) to be a bit too mushy for me. The chicken falls off the bone, which is great for leftovers for sandwiches or chicken salad, but I would prefer a more solid piece of chicken for dinner and crisper potatoes. I probably just need to do these type of recipes in an oven.

  8. I made this yesterday, and it was awesome! I sliced the onions super thin w/ my madoline and cooked everything on low for 10 hours. I can't believe how flavorful this was, considering how few ingredients are in this recipe! I will definitely be making this again. Thanks for the recipe!

  9. Just made this tonight and was really impressed because it's such a simple recipe, but it came out really good! The only improvement I have is to add a second onion because when you put the onion, chicken and sweet potato all in your mouth at once, it had a fantastic flavor! There wasn't enough to go around though! This is going to be a go-to recipe for winters from now on! Thanks for posting!
